Apple Pie Milk Bread

As American as apple pie, and back after a five year wait. The long awaited return of a Billy Bread favorite, just in time for July 4th. It is our classic milk bread with an apple pie twist: granny smith apples, toasted pecans, brown sugar, and warm spices folded into that soft, pillowy crumb. A monthly special, here for a limited time.

Hiatus Bourbon Sourdough

A true one of a kind, and a big hit at the Conejo Food and Wine Festival. I took the spent grain left over from Hiatus Craft House’s bourbon (mash bill: 65% corn, 20% rye, 10% malted barley, 3% caramel barley, 2% chocolate barley), dehydrated it, milled it into flour, and worked 15% of that into a sourdough loaf. The result is dark in color and full of deep, toasty flavor. Extremely limited: only 10 loaves. Photo coming soon. Curious where it began? From acting
jobs to a cottage license.

Billy Lush started baking sourdough in 2012 to stay busy between acting jobs. After enough years of giving away loaves on set, he earned a nickname (The Bread Guy) and the kind of quiet daydream that follows you around: maybe, one day, a real bakery.

When the world stopped in 2020, the daydream got loud. He researched California’s Cottage Bakery License, fired up the oven, and Billy Bread opened in September of that year. It has been, in his words, “quite the journey so far, a ton of fun, and amazing to feel a part of my community.”

Today the bakery is still a one-baker operation. Every loaf is fermented on its own schedule, scored by hand, and baked the day it is delivered. Sourdough is a living thing; Billy treats it that way.

A hands-on, beginner-friendly class taught by Billy in Newbury Park. In about three hours you’ll go through the whole process, mixing, shaping, scoring, and baking, and leave with everything you need to keep baking at home: a live sourdough starter, a banneton, a bench scraper, a printed guide, and three loaves at three stages so you can bake again the very next day.

Billy Lush is the baker and founder of Billy Bread. He is also a working actor (Generation Kill, The Chicago Code, For All Mankind, Low Winter Sun, The Black Donnellys) who began baking sourdough in 2012 between acting jobs. He turned the hobby into a bakery in September 2020.

Yes, Billy offers local delivery throughout Newbury Park and the greater Conejo Valley, with free pickup also available. Specific delivery timing is arranged directly with Billy. Out-of-area shipping isn't offered; the bread is too fresh to sit in a box for two days.

No. 06Is Billy Bread sourdough naturally leavened?

Yes. Every sourdough loaf is fermented using a live wild-yeast culture that Billy has maintained since 2012. There are no commercial yeasts, dough conditioners, or preservatives in the sourdough lineup. The only preservative is salt.

No. 07How long does fresh sourdough stay good?

Whole sourdough loaves stay at their best for three to four days at room temperature, cut-side down on a board or in a paper bag. After that, slice and freeze. Frozen slices toast directly from the freezer with no quality loss.

No. 08What is the Billy Bread sourdough class?

It's a 2.5- to 3-hour hands-on class for up to eight bakers at $175 per person. Each student leaves with a banneton, a bench scraper, a live sourdough starter, a printed recipe and starter-care guide, three loaves at three stages of fermentation, and the muscle memory of what dough should actually feel like when it's ready.

The Coyote Sourdough, a darker, deeper-baked sourdough named after the Sycamore Canyon Coyotes, Billy's kids' school mascot. That, or whatever the current monthly special happens to be.

Order by Thursday for that Friday's bake. Most loaves are made to order in small Friday batches, so a little lead time guarantees your bread. Bigger or custom orders are best placed a week or two out.

Yes. Billy takes custom and large-batch orders: wedding focaccia, corporate gifts, holiday spreads, and big family pickups. For anything sizeable, text or email Billy directly so he can plan the bake.

No. 13Are Billy Bread products vegan or allergen-friendly?

Many sourdoughs are vegan (flour, water, salt, starter), while milk bread, certain focaccias, butters, and cookies contain dairy, eggs, or honey. Everything is baked in a home kitchen that also handles wheat, dairy, eggs, and nuts, so it isn't suitable for severe allergies. Ask Billy about any specific ingredient before ordering.

You pay securely online at checkout when you order. Pickup at the Newbury Park kitchen is always free; local delivery adds a small flat fee ($3 in Newbury Park, $5 across the rest of the Conejo Valley zone).
